Description

The Unox XASR-03HS-SDDS SPEED.Pro countertop combi oven offers a unique combination of convection baking and speed cooking, making it an ideal choice for operations requiring traditional baking capabilities and rapid food preparation. This single piece of equipment efficiently bakes up to 3 (18″x13″) trays of bakery or pastry products, including frozen items, ensuring perfectly uniform results. Its speed mode utilizes controlled hot air flows, microwave technology, and a specialized Speed.Plate baking tray.

Designed for commercial use, the oven features a high-resistance AISI 304 stainless steel cooking chamber with integrated tray supports. It comes equipped with 384 bake and 384 speed programs, alongside 24 quick programs for common tasks. Advanced features include ADAPTIVE.Cooking for automatic parameter regulation, SMART.Preheating for optimal temperature and duration, and AUTO.Soft to manage heat rise. For intensive cooking, SPEED.Plus generates and distributes microwaves evenly, while DRY.Plus rapidly extracts humidity, and AIR.Plus provides multiple fans with reverse gear and two speed settings.

It is tested and approved for ventless operation for most food items, thanks to internal catalytic filtration that limits smoke, grease, and odor emissions. Integrated Wi-Fi capabilities support data-driven cooking, allowing users to monitor operations, create and share recipes, and download HACCP data, streamlining kitchen management.
